Fruits and vegetables:
A diet rich in fruits and vegetables, especially raw, can help increase our immune system and help lower our risks of all types of degenerative diseases include, heart disease and cancer. Most of these servings should be raw since cooking/heat kills the live enzymes and destroys much of the nutrients in food (depending upon the cooking method). Raw fruits and vegetables are loaded with antioxidants, vitamins, minerals, live enzymes and fiber to help keep us healthy.

WHY MORE MATTERS
The reason why the recommendations have continued to increase through the years is because today's produce is lacking nutrients as compared to decades ago. As a result, in order to get the nutrients from one bowl of salad consumed in the 1950’s (when produce was much more nutrient-dense), we now have to eat approximately 15 bowls! As a result, the 3-5 servings per day that was recommended decades ago, is no longer sufficient for us today to keep our immune systems optimal and to lower our risk of degenerative disease. We now need to eat many more servings in order get the same protection that produce offered years ago.
Some reasons for this are the following:
* Mass farming methods have completely depleted our soil from the nutrients it
once had
* Selective breeding, large quantities of pesticides, and synthetic fertilizers
decrease produce's ability to synthesize nutrients or absorb them from the soil.
* Today's produce is picked green, (when it has the least amount of
nutrients) rather than when it is vine-ripened, and sprayed with chemicals to
keep it green. Later, it is sprayed with more chemicals to make it look
ripened.
* Too much time is being spent between when produce is consumed and when
the produced was picked from its life source, the vine, (only to sit on a truck
during transportation, in storage, on a shelf, and in our fridge) before
consumption.
